They are right behind ice cream on my small list of <em>sweet <\/em>indulgences.<\/p>\n\n\n\n<p>American-style cookies are not unknown in Germany. You can find them in most supermarkets, but the selection is usually small and often limited to chocolate chip\u2026and those are more like Chips Ahoy than Otis Spunkmeyer.<\/p>\n\n\n\n<p>So I have adapted the recipes that I had to German ingredients and measurements, plus I have developed a few more that we really enjoy.  Some are still works-in-progress.  <\/p>\n\n\n\n<p>I will openly admit that <em>none <\/em>of my cookie recipes are 100% original.  I have taken bits and pieces from various recipes around the web and, with a bit of science, tweaked them into what I wanted.  <\/p>\n\n\n\n<p><em>Speaking of the science of cookies, <a rel=\"noreferrer noopener\" href=\"https:\/\/www.seriouseats.com\/editors\/j-kenji-lopez-alt\" target=\"_blank\">J. Kenji L\u00f3pez-Alt<\/a> over at <a rel=\"noreferrer noopener\" href=\"https:\/\/www.seriouseats.com\/\" target=\"_blank\">Serious Eats<\/a> has an amazing write-up on <a rel=\"noreferrer noopener\" href=\"https:\/\/sweets.seriouseats.com\/2013\/12\/the-food-lab-the-best-chocolate-chip-cookies.html\" target=\"_blank\">The Science of the Best Chocolate Chip Cookies<\/a>.  As the title suggests, he discusses how the quantities and preparation of the ingredients produces various styles of cookie.  So, whether your preference is light and cakey cookies, or dense and chewy cookies, it is worth reading his article to find out how to tweak your cookies to your liking.<\/em><\/p>\n\n\n\n<p>Anyway, some tips for making cookies:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Let all ingredients come to room temperature before mixing.  This means taking eggs and butter out of the fridge for a couple hours before starting.<\/li><li>Make the dough the night before and let it chill in the fridge. This helps prevent the cookies from spreading too much, and also improves flavor. <em style=\"font-size: 80%;\">(read the article from J. Kenji L\u00f3pez-Alt on why)<\/em><\/li><li>Get a portioning scoop (<a rel=\"noreferrer noopener\" href=\"https:\/\/www.amazon.de\/s?k=eisportionierer&__mk_de_DE=%C3%85M%C3%85%C5%BD%C3%95%C3%91&crid=67TFKVF0XM7Z&sprefix=eispor%2Caps%2C173&ref=nb_sb_ss_i_1_6\" target=\"_blank\" style=\"display: contents;\">DE<\/a> \/ <a rel=\"noreferrer noopener\" href=\"https:\/\/www.amazon.com\/s?k=portion+scoop&ref=nb_sb_noss_2\" target=\"_blank\" style=\"display: contents;\">US<\/a>).  This is basically an ice cream scoop with a lever for ejecting the dough. This helps insure uniform sized cookies.  I use a 40mm \/ 1.5Tbsp scoop.<\/li><li>Use a parchment liner on the baking sheets.  This makes for easier removal from the baking sheet, as well as quicker cleanup.<\/li><\/ol>\n\n\n\n<p>And now for the recipes.<\/p>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"http:\/\/ericscookbook.com\/index.php\/recipes\/chocolate-chip-cookies\/\" target=\"_blank\">Chocolate Chip<\/a> \u2013 these are fairly traditional chocolate chip cookies; not very different from the classic Nestl\u00e9 Toll House recipe.<\/p>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"http:\/\/ericscookbook.com\/index.php\/recipes\/chocolate-chocolate-chip-cookies\/\" target=\"_blank\">Chocolate Chocolate Chip<\/a> \u2013 these are rich chocolate cookies with chocolate chips.<\/p>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"http:\/\/ericscookbook.com\/index.php\/recipes\/white-chocolate-cranberry-cookies\/\" target=\"_blank\">White Chocolate Cranberry<\/a> \u2013 these are very similar to the chocolate chip cookies, only with white chocolate chips and dried cranberries.<\/p>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"http:\/\/ericscookbook.com\/index.php\/recipes\/ginger-molasses-cookies\/\" target=\"_blank\">Ginger Molasses<\/a> \u2013 these are soft, chewy cookies that taste like gingerbread. One of my favorite cookies.<\/p>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"http:\/\/ericscookbook.com\/index.php\/recipes\/oatmeal-raisin-cookies\/\" target=\"_blank\">Oatmeal Raisin<\/a> \u2013 these are classically soft and chewy cookies with oatmeal and raisins.<\/p>\n\n\n\n<p><a rel=\"noreferrer noopener\" href=\"http:\/\/ericscookbook.com\/index.php\/recipes\/sugar-cookies\/\" target=\"_blank\">Sugar Cookies<\/a> \u2013 this recipe is a basic sugar cookie recipe, with variations for <em>snickerdoodles<\/em> and <em>rainbow cookies<\/em>.
