Baked Eggs with Chickpeas & Spinach
Eggs baked in a tomato sauce with chickpeas and spinach
Yield: 8 servings
Time: 70 minutes
1 lb coleslaw mix
3 tbsp honey
½ tsp salt
⅛ tsp black pepper, fresh ground
½ c mayonnaise
¼ c buttermilk
4 tbsp cider vinegar
In a large bowl, mix dressing ingredients (everything except the coleslaw mix) until smooth and well incorporated. Add coleslaw mix and mix until well coated. Refrigerate for an hour before serving.
